MY PROFILE

My name is Frederick Carter. I have been in the hospitality business for almost fifty years and have been working in Scotland for the last forty years. My wife and I sold our four star guesthouse and self catering business called Carters Rest on The Isle of Skye in November 2009.

I was born in Ashton-under-Lyne near Manchester and after school I attended Salford Catering College for three years. On successfully completing my course I travelled to Switzerland to further my training working in the five star Schweizerhof Hotel in Lucerne and the five star Palace Hotel in St Moritz working in the kitchens and restaurants. After three years and with a working knowledge of the German language I returned to Britain to pursue a managerial position in the hotel industry.

My first position was as assistant manager at The Stork Hotel in Liverpool a busy city centre hotel and for six months I was acting manager. After three years I moved to Scotland to work for the Reo Stakis organisation as assistant manager and manager working mainly in inns and hotels on the west coast of Scotland.

Three years later I moved to the borders of Scotland to take over as manager at the Royal Hotel in Jedburgh for a new company called Clydesdale and Commonwealth Hotels Ltd which also owned Belhaven Brewery.
Throughout my eight years at the hotel I moved from manager to tenant and then the company sold the business to me and for the last five years I was proprietor.

Over the next five years two more businesses followed--The George Restaurant in North Berwick and The Tower View private hotel in Blackpool. Both these businesses were run successfully and were sold at a profit.
Unfortunately my marriage did not survive and my entrepreneurial career came to an end or at least went on holiday. For the first time in many years I was working for somebody else in a small rest home in Edinburgh called McNeil Trust as head chef. I worked there for sixteen lovely years. During this period I met my second wife and we embarked on our next adventure called Carters Rest on the Isle of Skye.

In 2005 we purchased a plot of land on the west coast and designed the house with the help of an architect and in January 2006 we moved in. Visit Scotland awarded us four stars and with the help of the internet and possibly one of the best views in Britain we were an instant success.

After four very successful years and nearing retirement age we decided to call it a day and retire near to our family in the Scottish Borders. Several months into retirement it became blatantly obvious that I needed a project to keep me sane. Still being of sound mind and body and not knowing any other profession the B&B School was formed.
